First, because student materials do get published. Let's say your instructor or your adviser says, "I know where you can publish this. It will look good on your resume." Imagine what it would be like to say, "No, I can't. I violated copyright."
Second, because you never know when someone knows the law and the copyright holder might be in class. If you show too much of a video as part of a class presentation, you have reason to worry, because you might be getting a letter from a lawyer.
